As a child, I was afraid of eating meat. Eggs and milk were fine, and I could accept processed meat - sausage or ham - where the animal’s form and texture were obscured. Processing felt like a veil, a way to consume without confronting what was once alive.

Growing up in a culture that emphasizes gratitude for all food, I trained hard to eat meat; first in small, unrecognizable pieces, then in larger cuts, eventually even finding some enjoyment. Within me, conflicting impulses coexist - empathy for animals shaped by childhood imagery, fear of flesh, the urge to refuse, and the internalized command to accept and be grateful. This tension becomes a kind of psychological digestion, as necessary as the physical act itself.

Before creating this work, I ate samgyetang in Korea, where a whole chicken sits intact in a boiling pot. Its form - legs folded, skin stretched - remained undeniable, even as others seemed untroubled. As we ate, the body gradually disappeared, transformed through consumption.

Perhaps "being able to eat" is not the absence of conflict, but the ability to carry it - to sit with it, taste it, and swallow it without resolution. The final veil may not be processing, but eating itself, which erases the evidence and leaves only memory.
